Many “melt and drip” fat analyzers are for a specific meat category (beef or poultry only). These work by heating up a specific amount of a sample and collecting the drippings. Depending on the height of the fat layer, the dial provides a percentage of fat. This dial relies on the human reading it to set the base level to the proper height, and to read the correct value presented by the dial. Typical measurement time is approximately three minutes and destroys the sample in process. The ChemWiz-Meat is a non-destructive method of analysis.
